About this bottle
Laurent-Perrier of Tours-sur-Marne (pronounced toor sewr MARN) launched Cuvée (pronounced koo-VAY) Rosé in 1968, when rosé Champagne was not in fashion. Bernard de Nonancourt chose a method rare in Champagne: the colour and aroma do not come from added red wine but from macerating Pinot Noir on its skins.
The wine is made from 100% Pinot Noir from about ten villages of the Montagne de Reims (pronounced mohn-TAN-yuh duh RANS), including the grand cru villages (pronounced grahn KREW) Ambonnay (pronounced ahm-bon-nay), Bouzy (pronounced boo-ZEE), Louvois and Tours-sur-Marne. The grapes are picked by hand, sorted and destemmed, and maceration lasts 48 to 72 hours, depending on the vintage. The bottles mature in the cellars for at least five years (magnums six), and the dosage is 9 g/l.
According to the house, the colour shifts from raspberry to salmon. On the nose there are raspberry, redcurrant, strawberry and black cherry, and on the palate first freshness, then roundness and the impression of a basket of freshly picked red fruit.
Laurent-Perrier recommends it with Asian and exotic cuisine, marinated fish, Parma ham, Chaource cheese and red-fruit desserts.
