About this bottle
Dom Pérignon is named after the Benedictine monk from the abbey in Hautvillers (pronounced oh-vee-LAIR) and has made only vintage Champagne from the start. Each wine comes from a single year and is made only when the year allows it. The set puts two consecutive vintages side by side.
2017 was a difficult year in Champagne: spring frosts, heat and rain just before the harvest. The wine is mineral and taut, with a chalky bitterness at the end. 2018 was warm and generous, so the wine is rounder and fruitier, with peach, lemon zest and a creamy texture.
The blend combines Chardonnay and Pinot Noir, and the wine ages in the house's cellars for many years before disgorgement.
Serve at 9-11 °C in a white wine glass. It is most interesting to open both vintages on the same evening and compare them side by side.
