About this bottle
Hervieux-Dumez is a family estate in Sacy, a premier cru village (pronounced pruh-MYAY KREW) a few kilometres south-west of Reims (pronounced rans).
First in the glass come vanilla, candied fruit and citrus. With time, notes of smoke and toasted almonds appear.
The wine comes from the house's best plots and is made in limited quantities. It matures for a year in a large oak cask (foudre) made from wood from the forests of the Montagne de Reims (pronounced mohn-TAN-yuh duh RANS), and then for three years on its lees.
With poultry, fish in sauce and cheese.
